GOOD MEXICAN EATS!

My friend called me yesterday (Monday) and asked what we were doing for dinner. I told her nothing special, just eating at home. She then asked us if we wanted to come over for dinner since her aunt cooked a dish that she was telling me about a couple of weeks ago. It's called "Birria de Pollo." All I know is that pollo means chicken, and that this was going to be authentic Mexican food!

My husband was all down for that!

Basically, it's cut up chicken, potatoes, carrots, and broth. I have no idea what seasonings were used, but it was delicious.

She also had ceviche that her aunt made, and it was the best we've ever had! The ingredients were so fresh and light!

    i've never tried a coke float!! i always use root beer. but i may have to try a coke one today. :0)

  5. I've always been pretty content with the Southern food I was raised on, but reading your blog makes me want to go food exploring. Birria de Pollo. Even the sound of it is good on the tongue. :)
