Here is the recipe I used from Allrecipes! FYI, I added a dash of vanilla extract and cinnamon to kick it up a notch!
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 large bananas, mashed
- 3/4 cup white sugar
- 1 egg
- 1/3 cup butter, melted
- Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
- Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
- Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.

ooohhh, i LOVE banana muffins and i LOVE to bake too. I was about to bake some muffins for breakfast :)
I usually replace the butter with vege oil and I dump in 1 cup of roll oats, just to make myself think it is healthier :) YUM YUM!
Those look so yummy! I love the smell of muffins during colder weather. I have some green bananas right now but maybe when they ripen more I'll make some muffins.
Thanks for visiting my Tackle!
They look yummy~!~!!!
They sound and look delicious. I have a recipe for banana bars with cream cheese frosting that I LOVE! It's a perfect way to use those "bad" bananas.
Girl, I am totally impressed by you baking/making muffins at 5:30 in the morning. Totally impressed! They look AWESOME!! I just printed the recipe so I can try them soon. Thanks for sharing it with us!

LOL..please, don't be too impressed, really! I hardly ever bake that early in the morning..lol.
Yum! I've got bananas in the freezer, and can't wait for those long winter nights when all I want to do is hang out in the kitchen and cook/bake.
Wow, you're much more ambitious than I am to get up early to bake!
Oh, and I love allrecipes. I have yet to find something there I didn't like!
